Recipe tip: Truffle noodles

Ingredients:

2 shallots, 50 g butter, 300 g tagliatelle,100 g Parmesan cheese, 100 ml cream, a pinch of salt and pepper, 20 g fresh black truffles (adjust to taste)

Zubereitung:

Clean the truffles and cut into thin slices. Cook the pasta in salted water until al dente. Melt the butter in a pan over a medium heat and sauté the finely chopped shallot until translucent. Add the cream and heat briefly. Stir in the grated Parmesan and season with salt and pepper. Add two thirds of the truffle slices to the sauce and leave to infuse over a low heat to release the flavour. Drain the pasta and add directly to the sauce, mix well. Arrange the truffle pasta on plates, garnish with the remaining truffle slices and Parmesan and serve immediately.
